Right now I am enjoying the giant brain power breakfast I made for myself. It included:
-1/3 c. oats made with 1/2c. water + 1/2 c. unsweetened almond milk
- 1 banana
- a few chia seeds
- 1/2 c. frozen blueberries
- 2 eggs
- 1 T. sunflower butter
The blueberries made it a creepy color, so I added some unsweetened coconut and sprinkles to the top to make it pretty. This breakfast is a little bigger than what I would normally have because I need extra brain power today - I am defending my thesis this afternoon!
It's been a long time coming...I started grad school in Fall 2007! I can't believe it's been that long! I'm so excited to get this over with!
Also -a big CONGRATULATIONS to my friend Erica and her husband Matt! They had their first baby last night - it's a girl! Erica and I have been friends since junior high. I can't believe she's a mommy now! She'll be awesome :)
